How to prepare our pasta like a chef  in just a few steps

Amatriciana

You will need: a saucepan, water, salt (preferably coarse), a fairly large non-stick pan

  1. Fill a large saucepan with water, add salt (a small handful is enough for about a liter of water), put a lid on and bring to the boil
  2. While waiting for the water to boil, heat the sauce over low heat in a fairly large non-stick pan (alternatively, you can heat it in the microwave 2/2,5 minutes at 650w, but we advise you to heat it over a fire ;-D)
  3. Once the water is boiling, stir in the pasta and cook for 4-5 minutes
  4. Drain the pasta and put it into the pan, gently tossing it through the sauce
    Little tip: Set aside some starchy cooking water before draining the pasta and add splashes of it now, continue stirring over low heat to obtain a very smooth sauce!
  5. Transfer onto a plate, add Parmesan and your pasta is ready to be tasted!
  6. Buon appetito!

Carbonara

You will need: a saucepan, water, salt (preferably coarse), a non-stick pan, a bowl

  1. Fill a large saucepan with water, add salt (a small handful is enough for about a liter of water), put a lid on and bring to the boil
  2. While waiting for the water to boil, cut the guanciale into small strips and put it in a non-stick pan. Cook it over medium heat without adding anything until it becomes crisp
  3. Once the water is boiling, stir in the pasta and cook for 4-5 minutes
  4. Drain the pasta and pour it into a bowl, add the egg and pecorino sauce together with the guanciale strips and toss everything well
    Little tip: Set aside some starchy cooking water before draining the pasta and add splashes of it while tossing to obtain a very smooth sauce!
  5. Transfer onto a plate and your pasta is ready to be tasted!
  6. Buon appetito!

Ragu of tiny meatballs
